3 Gluten-Free Summer Desserts You Should Try Right Now
1. Cold cheesecake with berries
A fresh and colorful cheesecake, perfect for hot summer days.
Ingredients for the base:
- 250g of gluten-free dry biscuits
- 100g melted butter
- 1 tablespoon sugar (optional)
Ingredients for the cream:
- 500g spreadable cheese
- 200ml fresh cream
- 120g icing sugar
- Juice of half a lemon
- 10g gluten-free gelatine sheets
- 300g mixed berries
- 3 tablespoons gluten-free berry jam
Preparation:
- Finely crush the gluten-free biscuits and mix them with the melted butter.
- Press the mixture into a springform pan and leave to rest in the refrigerator.
- Soften the gelatine in cold water, then dissolve it in a little warm cream.
- Whip the cheese with the icing sugar and lemon juice, then add the semi-whipped cream.
- Add the dissolved gelatine and mix gently.
- Pour the cream onto the biscuit base and leave to set in the refrigerator for at least 4 hours.
- Before serving, garnish with fresh berries and a light glaze made with diluted jam.
2. Strawberry Tiramisu
A summer version of the classic tiramisu, light and fragrant.
Ingredients:
- 300g of gluten-free ladyfingers
- 500g of mascarpone
- 4 fresh eggs (to be pasteurized for food safety)
- 120g sugar
- 300g fresh strawberries
- 100ml orange juice
- Mint leaves for decoration
Preparation:
- Wash and cut half of the strawberries into pieces, blend them to obtain a puree.
- Mix the puree with the orange juice to obtain the liquid in which to soak the ladyfingers.
- Separate the yolks from the egg whites and beat the yolks with the sugar until the mixture is light and frothy.
- Add the mascarpone and mix gently.
- Whip the egg whites until stiff and fold them into the mascarpone mixture using bottom-up movements.
- In a baking dish, alternate layers of ladyfingers soaked in strawberry juice and mascarpone cream.
- Decorate the surface with the remaining fresh strawberries cut into slices and mint leaves.
- Let it rest in the refrigerator for at least 3 hours before serving.
3. White chocolate and raspberry mousse glasses
Elegant and easy to prepare, these glasses are perfect for a summer dinner.
Ingredients:
- 200g gluten-free white chocolate
- 300ml fresh cream
- 3 sheets of gluten-free gelatin
- 150g fresh raspberries
- 40g icing sugar
- 50g of crumbled gluten-free biscuits
- White chocolate chips for decoration
Preparation:
- Soak the gelatine in cold water.
- Heat 100ml of cream, remove from the heat and melt the chopped white chocolate in it.
- Squeeze the gelatine and dissolve it in the still hot mixture.
- Whip the remaining cream and gently fold it into the cooled chocolate mixture.
- In individual glasses, create a layer of crushed biscuits on the bottom.
- Add a layer of white chocolate mousse.
- Blend half of the raspberries with the icing sugar and filter to remove the seeds.
- Pour the raspberry sauce over the mousse and garnish with whole raspberries and chocolate chips.
- Let it rest in the refrigerator for at least 2 hours before serving.
