Buckwheat Penne Felicia with Vegetables
Ingredients:
- 200g of Felicia Buckwheat Penne
- 1 courgette
- 1 pepper
- 1 carrot
- 1 onion
- 2 tablespoons extra virgin olive oil
- Salt and Pepper To Taste
Preparation:
- Cook the pasta: Cook the penne in plenty of salted water following the instructions on the package.
- Prepare the vegetables: Cut the vegetables into julienne strips. In a large skillet, heat the oil and fry the onion until golden brown. Add the remaining vegetables and cook until tender but crisp (about 5-7 minutes).
- Add the pasta: Drain the pasta and add it to the pan with the vegetables. Stir well to combine.
- Serve: Season with salt and pepper and serve hot. You can add a sprinkling of grated Parmesan if you wish.
