Crumbl Cookies GLUTEN FREE!

A tasty recipe to prepare gluten-free Crumbl Cookies . These are soft, buttery and flavorful cookies, inspired by the famous American chain. This version is gluten-free , but maintains all the deliciousness of the original!

Ingredients (for about 12 large biscuits)

Gluten-free flour : 270 g (I recommend a gluten-free flour mix that contains xanthan gum for a better consistency)

Corn starch : 20 g (to make the biscuits softer)

Baking soda : 1 teaspoon

Salt : 1/2 teaspoon

Melted butter (at room temperature): 170 g

Granulated sugar : 100 g

Light brown sugar : 150 g

Vanilla extract : 2 teaspoons

Eggs : 1 large + 1 yolk

Dark chocolate chips (gluten free): 150 g

Procedure

1. Prepare the dry ingredients : In a bowl, sift together the gluten-free flour, cornstarch, baking soda, and salt. Set aside.

2. Cream the butter and sugars : In another bowl, beat the soft butter with the granulated sugar and brown sugar until light and fluffy (about 3-4 minutes).

3. Add the wet ingredients : Add the whole egg, egg yolk and vanilla extract to the butter and sugar mixture. Mix well until the mixture is smooth.

4. Combine the dry ingredients : Gradually add the gluten-free flour mixture to the butter mixture, mixing on low speed. Finally, fold in the chocolate chips.

5. Form the biscuits : Take portions of dough (about 80-90 g each) and form balls. Place them on a baking tray lined with baking paper, spacing them apart.

6. Resting in the fridge : Place the pan with the formed biscuits in the fridge for at least 30 minutes (this will help them keep their shape during cooking).

7. Baking : Preheat the oven to 350°F. Bake the cookies for about 12-15 minutes, until the edges are lightly golden but the center is still soft. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Advice

For an extra touch, you can add a pinch of coarse sea salt to the top of the freshly baked cookies.

Store cookies in an airtight container to keep them soft for up to 5 days.
